Update - it is written at line 1 at page 1 of the datasheet "ARM-based 32-bit MCU, up to 128 KB Flash, *crystal-less* USB FS 2.0, CAN, 12 timers, ADC, DAC & comm. interfaces, 2.0 - 3.6 V" - so it should do clock recovery from USB data stream.
Another note (if you go this way) - this chip has two I2C controllers - so you could "spread" the sensors on both of them to get better throughput. Just take care to estimate the data rate of each one of them so make a good balance.

Wow, this is 100 pins ... sure it has everything you need (and a lot of things that you don't need). But is 14mm square, I hope you have enough board space. Check this link for reference - you can use design files of this eval board for quick start: http://www.st.com/web/en/catalog/tools/FM116/SC959/SS1532/PF259717
There is a claim in the datasheet: "Internal 48 MHz oscillator with automatic trimming based on ext. synchronization" - not sure but I suspect that this would be a good option if used on USB - no need for clock crystal for the STM32.

Yep, 071 is good if host connection is either I2C or SPI. There are 2
I2C
controllers so it can run as gateway. But for USB there is STM32F072CBT6 - at Digikey it is priced at 2.37USD
for
1000pcs -
http://www.digikey.com/product-detail/en/STM32F072CBT6/497-14645-ND/4815292 .
This one is in 48 pin. If more pins are needed, just switch to: STM32F072RBT6 - http://www.st.com/web/catalog/mmc/FM141/SC1169/SS1574/LN1823/PF259605
And this: http://www.digikey.com/product-search/en?KeyWords=STM32F072VBT6 ??
Thanks.
